Peanut Butter Cookies stuffed with creamy
PEANUT BUTTER FROSTING & a layer of STRAWBERRY JAM
I baked these delicious peanut butter cookies over a week ago, but am just now getting around to sharing the recipe. Editing the photos and typing in the recipe is reminding me how much I enjoyed these COOKIE SANDWICHES! The peanut butter cookies are baked from my classic PEANUT BUTTER COOKIES {THREE WAYS} RECIPE, the one we baked in the cookie biz; the cookies melt in your mouth when eaten plain, but now with the addition of creamy peanut butter frosting and a layer of jam, they are even better.
I’ve been thinking a lot lately about adding more cookie sandwich recipes to the blog. Initially, I was planning on baking MY FAVORITE CHOCOLATE CHIP COOKIES, and adding a layer of vanilla ice cream for a basic cookie sandwich. Not very exciting or original, but still the melting ice cream with the melting morsels of chocolate presents beautifully and photographs well, albeit a bit messy.
I also considered classic oatmeal cookies spread with vanilla frosting for an oatmeal creme pie. Gourmet Triple Chocolate Chip Cookies stuffed with chocolate buttercream and rolled in mini chocolate chips came to mind.
I finally chose simple Peanut butter and Jelly cookies. I think it has to do with me spending time with my almost 2 granddaughter. And me feeling a bit like I’d like to share some of the simpler times with her. Remembering with nostalgia the times I made Peanut butter and jelly sandwiches for her mom during her elementary school years. My granddaughter hasn’t started eating PB&J sandwiches yet, but she does enjoy peanut butter and I’m thinking she’ll be asking for jelly soon. I know for sure she likes cookies. So, I baked a batch of Peanut butter and Jelly Cookie sandwiches. She took a few bites. Her grandparents ( and parents ) ate the rest. 😊
Ok, so this line of thought may make little sense to someone searching for a cookie sandwich recipe. To summarize, these PB&J cookies aren’t just for kids. The thick and creamy peanut butter frosting combined with your favorite jam turns everyday peanut butter cookies into a sweet-salty dessert that cookie lovers of all ages will enjoy!
Bake a batch and get creative with your choice of jams! I used strawberry preserves with the peanut butter frosting. But raspberry jam or grape jelly would also be irresistible treats.

- Cookies
- 4 ounces unsalted butter (1/2 cup)
- 3 ounces sugar (1/3 cup)
- 3 ounces packed brown sugar (1/3 cup)
- 4 ounces creamy peanut butter (1/2 cup) ( I always use Jiff brand)
- 1 large egg
- 1 tsp pure vanilla
- 6 ounces all-purpose flour (1⅓ cup)
- 2 Tablespoons rolled oats (old-fashioned oatmeal)
- ½ tsp kosher salt
- ¾ tsp baking soda
- *extra granulated white sugar for rolling the cookies, use about ⅓ cup
- Peanut Butter Frosting
- 12 ounces confectioner's sugar ( 3 cups )
- 3 Tablespoons butter
- 6 Tablespoons Peanut Butter
- 6 Tablespoons milk
- 1 teaspoon pure vanilla
- * Jam or preserves of your choice, I used Strawberry Preserves for this recipe
- Cookies
- Cream butter, sugars and peanut butter
- Add egg and vanilla and mix together
- Add flour,oatmeal,baking soda and salt and mix. Don't overbeat, just mix until all ingredients come together.
- Cover and chill dough for 30 minutes.
- Portion cookies as you desire. I used a medium cookie scoop or about ¼ cup per cookie to make 14 cookies. Roll the cookies in the bowl of white sugar. No need to roll smooth, just drop the cookie dough in the sugar and roll until covered.
- Place on parchment or silpat lined cookie sheet. Press down lightly with the heel of your hand.
- Bake 350 degrees for 12 minutes. Cool.
- Frosting
- Cream together confectioner's sugar, softened butter and peanut butter until creamy. Add vanilla and milk and cream until easy to spread. Add more milk as desired to achieve a creamy frosting. Frost the bottoms of 2 cookies, add a tablespoon or so of jam and make a sandwich with the 2 cookies.
- This recipe made 14 cookies, so I ended up with 7 cookie sandwiches. You can adjust the frosting and jam as you like. I used a lot of frosting for these sandwiches, if you want just a thin layer, you could cut the frosting recipe in half.
- Chill the cookie sandwiches as the jam will thin if left out at room temperature. They are wonderful right out of the fridge!
