Chunks of walnut pieces combine with semi-sweet chocolate chips for a classic homemade Walnut Chocolate Chip Cookie!

Ingredients
  • 8 ounces unsalted butter (1 cup), softened
  • 7½ ounces packed light brown sugar (1 cup)
  • 7 ounces granulated white sugar (1 cup)
  • 2 large eggs
  • 1 Tablespoon pure vanilla
  • 1 ounce rolled (old-fashioned) oats (1/4 cup)
  • 13 ounces all-purpose flour (preferably unbleached) (3 cups)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup Walnut pieces
  • 2 cups semi-sweet chocolate chips (12 ounces)
Instructions
  1. Cream together butter and sugars in mixing bowl, careful not to overbeat.
  2. Combine the eggs with vanilla and add to your mixture, mixing just to blend the egg with the sugars and butter.
  3. Add the rolled oats.
  4. Mix together the flour, baking powder, baking soda and salt in a separate bowl. Slowly incorporate the dry ingredients into the wet ingredients.
  5. Stir in the chocolate chips and walnuts, using your hands to finish mixing.
  6. Portion 2 ounces of dough with a cookie scoop (or ice cream scoop) for each cookie or you can use a ¼ cup measuring cup to estimate.
  7. Chill covered dough balls minimum one hour. Ideally chill overnight for the best results if you can wait that long.
  8. Bake in 375 degree oven 12 to 14 minutes.
  9. Cool on cookie sheet for 5 minutes, then remove to cooling rack or sheet.
Notes
A note on chilling the dough. I find that chilling the dough does wonderful things to chocolate chip cookie batter. If you can chill for 24 to 48 hours, you get the best results in browning and flavor. I portion dough balls with a cookie/ice cream scoop, place on cookie sheet and chill just until firm, maybe 20 minutes. Then I place the firm dough balls in a ziploc bag or covered tupperware container to continue chilling. When I'm ready to bake, I place the dough balls on cookie sheets for 10 minutes prior to baking. You can also use this method to bake just a few cookies at a time. If you want to keep the dough balls for longer than 1 week, I would freeze them.
