Cinnamon, Walnuts and Dark Chocolate come together in this chewy Oatmeal Cookie

Ingredients
  • 4 ounces butter (1/2 cup or 1 stick)
  • 7½ ounces light brown sugar (1 cup)
  • 1 Tablespoon unsulphured molasses (I use Grandma's molasses)
  • 1 whole egg
  • 1 teaspoon pure vanilla
  • 4½ ounces all-purpose flour (1 cup), I always use unbleached
  • ¾ teaspoon Baking Soda
  • ½ teaspoon Cinnamon
  • ½ teaspoon Kosher Salt
  • 3½ ounces rolled oats (1 cup) I use Quaker Oats, old-fashioned (not quick oats)
  • 6 ounces dark chocolate chips (1 cup)
  • 2 ounces chunky walnut pieces (1/2 cup)
Instructions
  1. Preheat oven to 350 degrees.
  2. Cream room temperature butter and brown sugar together until well blended.
  3. Add molasses and blend.
  4. Add egg and vanilla and mix into batter.
  5. Add flour, baking soda, cinnamon and salt and mix until incorporated into batter.
  6. Stir in Oats just until blended.
  7. Add Chocolate and Walnuts.
  8. Using 2 TBL for each cookie or a small ice cream scoop, place cookies on a silpat or parchment lined cookie sheet.
  9. Bake 11 to 12 minutes at 350 degrees.
  10. Allow to finish baking and cool on cookie sheet.
Notes
I love the combination of dark chocolate and walnuts in this oatmeal recipe. I used dark chocolate chips from Nestle. A combination of semi-sweet and dark would be delicious also.

I like chunky, large walnuts in my chewy cookies, so I buy walnut halves and and cut into chunky pieces.
