Banana Bread Recipe with Greek Yogurt

A classic family recipe for banana bread updated with caramelized bananas and greek yogurt

Ingredients
  • Carmelize Bananas:
  • 2 Tablespoons butter
  • ¼ cup packed brown sugar
  • 1 cup ripe bananas (2 medium)
  • ½ teaspoon cinnamon
  • Banana Bread:
  • ½ cup butter (1 stick)
  • ¾ cup white granulated sugar
  • 1 teaspoon pure vanilla
  • 2 large eggs
  • 1½ cups unbleached, all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ cup plain Greek Yogurt
Instructions
  1. Begin by slicing ripe bananas and adding to small saucepan.
  2. Add 2 Tablespoons butter and ¼ cup brown sugar to the mixture and heat on medium low heat until bananas soften and the mixture becomes syrupy and golden, about 5 minutes.
  3. Sprinkle cinnamon over mixture and stir to incorporate.
  4. Set aside to cool. ( I set mine in the fridge to hasten cooling time)
  5. Preheat oven to 350 degrees.
  6. Using a mixing bowl, cream ½ cup softened butter and white sugar.
  7. Add eggs and vanilla and mix together.
  8. Add COOLED banana mixture and beat until well combined.
  9. After combining dry ingredients of flour, baking soda and salt, add to the wet mixture, alternating with yogurt and mix just until mixed together.
  10. Pour batter into buttered 9x5 inch loaf pan.
  11. Bake in 350 degree oven for one hour
