Peanut Butter and Jelly Cookie Sandwiches stuffed with a creamy peanut butter frosting and a layer of strawberry jam

Ingredients
  • Cookies
  • 4 ounces unsalted butter (1/2 cup)
  • 3 ounces sugar (1/3 cup)
  • 3 ounces packed brown sugar (1/3 cup)
  • 4 ounces creamy peanut butter (1/2 cup) ( I always use Jiff brand)
  • 1 large egg
  • 1 tsp pure vanilla
  • 6 ounces all-purpose flour (1⅓ cup)
  • 2 Tablespoons rolled oats (old-fashioned oatmeal)
  • ½ tsp kosher salt
  • ¾ tsp baking soda
  • *extra granulated white sugar for rolling the cookies, use about ⅓ cup
  • Peanut Butter Frosting
  • 12 ounces confectioner's sugar ( 3 cups )
  • 3 Tablespoons butter
  • 6 Tablespoons Peanut Butter
  • 6 Tablespoons milk
  • 1 teaspoon pure vanilla
  • * Jam or preserves of your choice, I used Strawberry Preserves for this recipe
Instructions
  1. Cookies
  2. Cream butter, sugars and peanut butter
  3. Add egg and vanilla and mix together
  4. Add flour,oatmeal,baking soda and salt and mix. Don't overbeat, just mix until all ingredients come together.
  5. Cover and chill dough for 30 minutes.
  6. Portion cookies as you desire. I used a medium cookie scoop or about ¼ cup per cookie to make 14 cookies. Roll the cookies in the bowl of white sugar. No need to roll smooth, just drop the cookie dough in the sugar and roll until covered.
  7. Place on parchment or silpat lined cookie sheet. Press down lightly with the heel of your hand.
  8. Bake 350 degrees for 12 minutes. Cool.
  9. Frosting
  10. Cream together confectioner's sugar, softened butter and peanut butter until creamy. Add vanilla and milk and cream until easy to spread. Add more milk as desired to achieve a creamy frosting. Frost the bottoms of 2 cookies, add a tablespoon or so of jam and make a sandwich with the 2 cookies.
  11. This recipe made 14 cookies, so I ended up with 7 cookie sandwiches. You can adjust the frosting and jam as you like. I used a lot of frosting for these sandwiches, if you want just a thin layer, you could cut the frosting recipe in half.
  12. Chill the cookie sandwiches as the jam will thin if left out at room temperature. They are wonderful right out of the fridge!
Notes
If you wrap these cookie sandwiches, they freeze very well. Wrap individually with saran wrap for a quick on the go treat.
